6 rice paper wrappers
¼ cup fresh mint
½ cup shredded carrots
½ head of lettuce leaves
1 cup cooked rice vermicelli noodles
1 can of FinerFin Spicy Chili Tuna
Start by softening the rice papers in a bowl filled with slightly warm filtered water. Use 2 wrappers per roll to avoid breaking while rolling it. It will take about 1 minute to soften the wrapping paper, once that is done, very carefully squeeze to remove the excess water and transfer the paper to a clean cloth.
Lay the paper flat straitening all the wrinkles. Start by arranging 3-4 mint leaves on the bottom of the rice paper. Then top with 1/3 of a can of FinerFin Spicy Chili Tuna. Add the lettuce leaves, the vermicelli, and the shredded carrots.
You can use your imagination and add anything else you like, as long as you keep about 2 inches uncovered on each side. To roll fold the uncovered sides inward, then tightly roll the rice paper into a roll.
Repeat the process another 2 times for a total of 3 rolls. Serve with your favorite sauce. In this recipe we served with soy sauce and sriracha mayo.
