½ medium seedless watermelon
1 large cucumber cut into cubes
1 medium red onion cut julienne
1/8 cup of fresh mint leaves
½ cup feta cheese
1 can FinerFin Zesty Lemon Tuna
½ cup olive oil
¼ cup balsamic vinegar
Salt and pepper to taste
Start by making the dressing. In a bowl combine the olive oil, the balsamic vinegar and the salt and pepper. Whisk it together until all combined. Add the sliced red onions and set aside to marinate the onions.
Using a large cutting board, peel the watermelon and cut half of it into large cubes. Transfer into a bowl; add the cubed cucumbers and the mint leaves. Top with the marinated onions and drizzle with the balsamic dressing.
Serve the salad into individual bowls topping with the feta cheese and the FinerFin Zesty Lemon Tuna. This makes for a perfect summer meal, refreshing and packed with healthy proteins. Enjoy immediately.
